1 servings | Prep time : 5min | Cook time : 5min

Ingredients

  • 1 cup of rice

  • 2 eggs

  • Shredded Chicken, from a rotisserie chicken is recommended for ease

  • 1 tbsp of Garlic mayonnaise

  • 1 tbsp of Kewpie moyonnaise

  • Oil, for cooking

  • ½ cup of shredded cheese

  • Pepper, to taste

  • Salt, to taste

  • Garlic powder, to taste

  • Italian mix, to taste

  • Smoked paprika, to taste

Method

  1. Prepare the pre-made rice cup by peeling off the plastic lid. Cook in the microwave for 1 minute as per package instructions. Once cooked, mix the rice with a fork to break up any clumps.

  2. While the rice is cooking, heat a non-stick pan with a drizzle of olive oil.

  3. Crack the two eggs into the heated pan. Cook until the bottom of the eggs is all white.

  4. Gently mix the eggs in the pan with a spatula, but not too much initially. Let them rest briefly, then mix again, allowing them to cook until they form small crumbs but are still a bit runny (not overcooked).

  5. Add the cooked rice to the pan with the eggs and mix well until combined.

  6. Season the rice and egg mixture with black pepper, sea salt, garlic powder, Italian mix, and smoked paprika, all to taste. Mix thoroughly to blend the spices.

  7. Add the shredded chicken to the pan. Ensure the chicken is well shredded to avoid lumps. Mix everything together.

  8. Squeeze in both the garlic mayonnaise and the Kewpie mayonnaise. Mix well until the mayonnaise is fully incorporated and creates a somewhat pasty consistency with the rice mixture.

  9. Transfer the fried rice to a serving bowl.

  10. Top the fried rice with shredded cheese and mix it in until the cheese is melted and well combined with the hot mixture.

Helpful Tips

Using a rotisserie chicken for shredded chicken saves time and effort.

Ensure the plastic lid is partially peeled off the pre-made rice cup before microwaving to prevent it from exploding.

Do not overcook the eggs; they should be crumbly but still slightly soft.

This dish is commonly served with roasted seasoned seaweed snack; fold a piece of seaweed in half and place a spoonful of fried rice inside for a perfect bite.
